Best Quiche Lorraine Recipe

Happy National Quiche Lorraine Day! To mark the occasion, I have written up my personal Quiche Lorraine Recipe for you — I think you’ll really like this take on it!

Quiche Lorraine is a major French staple dish that all cooks should know how to make, because it is just so simple to get right. It is named after the Lorraine region of France which is up in the northeastern corner of the country, which is near Germany and Switzerland — which is apropos, because the dish is most commonly made with Swiss cheese.

Truly, the dish is quite simple. You have some crumbled, cooked bacon, some sauteed onion, some grated Swiss cheese, and you layer those ingredients with an eggy custard mixture in a pie shell and bake. 🥚 Honestly, you don’t need to get super-fancy with it for it to taste like a million dollars!

Nostalgia for Chicken Divan

Did your mother make Chicken Divan, growing up? Ours did, and it is one of those flavors that takes me back to my childhood! It’s made me think how great it might be to do up a cookbook of those classic American dishes!

Chicken Divan – warm & gooey, with chicken, bechamel, broccoli, cheese & breadcrumbs!

Reading up on it now, Chicken Divan was invented at the Hotel Chatham in New York City at the turn of the 20th Century, by the hotel’s chef, Anthony Lagasi. Lagasi was apparently also the past president of the Escoffier Society and the Chefs de Cuisine Association — but, while he was apparently Italian, he was not related to Emeril Lagasse, despite their similarity of surnames! (I love that the inventor of Chicken Divan was Italian!)

Happy Spanish Paella Day!

Just a quick note here on National Spanish Paella Day!

I have fond memories of travelling through Spain once with friends right after college. At one point, we shared a paella stirred-up for us in a street festival in Valencia on an outdoor fire, and the flavor will always be in my memories! The flavors of the seafood, the saffron, and the essence of the smoke from the fire melded together to make a warming and satisfying dish!

Have a Happy National Ravioli Day with this Walnut Gorgonzola Ravioli!

I decided I’d celebrate National Ravioli Day by sharing my special recipe for Walnut Gorgonzola Ravioli with you. This is probably my husband’s favorite dish that I make, although I do it mainly for special occasions. It’s rich, creamy and with the perfect counter-balancing notes between the walnuts and the gorgonzola cheese. It’s a dish that you could definitely find in a restaurant in Northern Italy, but it’s really not at all pretentious.

For those who are Lacto-ovo-vegetarians, this entree is perfect. It’s not gluten-free, but can be made so by substituting the flour.

Walnut Gorgonzola Ravioli - Homemade Fresh

People often believe that making your own pasta from dough is too labor-intensive, but it’s really not, and the flavor is much richer and warmer when you do. That’s why this dish and others with homemade pasta are much better and will seem more like “restaurant quality”. Also, once you’ve done it once or twice, it becomes easier and quicker. The main trick is that the dough must be the right consistency.

We’re Jammin’ This Summer!!

I love living in Portland, but I really love summer in Portland! For one thing, my kids are out of farmer_marketschool, so it’s just one adventure after another. We have a new adventure this year, directly related to summer, but it doesn’t involve a swimming pool – we’re jammin’! I stumbled upon some slow-cooker recipes for fruit jams, so we’re combining our love of cooking with our passion for the area’s fresh fruit, which I think may easily be some of the best in the world.

Which brings me to my next favorite thing about summer in Portland – the Farmer’s Markets. I’ve used this website to find markets and other sources of local produce, and we’ve also just driven around outside the city and looked for roadside peddlers. The cherries and blueberries are particularly luscious in the Northwest, and we are pretty much addicted to all things blueberry. Once we’ve made the jam, we’ll make healthy little pies (I’m going to be playing around with crust recipes, so I’ll get back to you on that), toaster pastries, and whatever else we can think of.

So, back to the jam. This is apparently not a new idea, but it’s new to me – so I’m excited!!! The kids are really looking forward to making their own jam – and they’re picking out our soundtrack so we can jam while we’re jammin’! Here are some of the recipes I’m looking over:

I like the look of this one because it has the word “riesling” in the name.

I may try this one with riesling, too, just because. One comment on this recipe suggested not peeling the peaches. Works for me…I mean, less work for me!

I’ll let you know how this works out, once we get the fruit. If you try it before we do, we want details!

Happy National Strawberry Parfait Day!

Strawberries are one of my favorite fruits, and they are the quintessential fruit of lazy summer days! Today is National Strawberry Parfait Day as described by the mysterious powers-that-be, so I recommend that everybody celebrate this with their families like I do!

Depending on how you make it, Strawberry Parfait can actually be pretty healthy!

One can create the beautiful layers using frozen yogurt instead of ice cream, and with graham cracker crumbs diluted down with granola and whipped cream. From Pie to Punkin Chunkin – Pumpkins Please!

I’ve always been a fan of pumpkins. They were the basis for my favorite childhood dessert at Thanksgiving, with whipped cream, of course! I will buy a bakery pie in a pinch, but I prefer the homemade variety. When I got old enough, carving pumpkins was an annual Halloween festivity, followed by the bets to see how long it took for them to look like zombies.

Fettuccine With Pumpkin, Sage & Bacon Pasta Sauce Recipe

I recently ran across this “Fettuccine with Pumpkin Sauce” recipe which sounded simple, healthy and delicious, and I tried it out. It was very quick and easy to make, and my husband loved it. I modified the original Cooking Light recipe by adding caramelized shallots and nutmeg, and I think that helped pump up the savory aspect of the pumpkin pasta sauce nicely.

So you’ve probably figured out by now that I’m a foodie. I love food. I find simple delights in tastes, textures, combinations – everything to do with food. And one of my favorites is bacon. Yes, I am a bacon lover. I have eaten peanut butter and bacon milkshakes and only complained that the bacon wasn’t chopped finely enough to get through the straw. I have eaten maple and bacon doughnuts (thank you, Voodoo Doughnuts!). I have bacon-flavored mints (surprisingly good), bacon-flavored popcorn in my pantry, and a bacon-less refrigerator is not tolerated in my house. 😉

Bacon is probably one of the top reasons I’ll never turn completely vegetarian, although I definitely enjoy eating vegan/vegetarian meals frequently.

I’m not going to get into the science of bacon, or its nutritional pros and cons, but it’s like anything else – fine in moderation. Anything is bad for you if you consume too much, even water. This post is dedicated to bacon lovers everywhere and the people who love bacon lovers. Read More→

Flying Jacob - Flygande JakobSome of my ancestors were Swedish, so I sometimes look around for some Swedish or Scandinavian dishes to serve up to my family. Periodically I’ll do up some Swedish Meatballs or a simple salmon with dill and creamed kale. Recently, though, I ran across this odd-sounding Swedish recipe that came out of the seventies — remember when casseroles were so much in vogue? This one is a casserole, too, and it’s apparently been a sort of guilty secret among the Swedes. Widely liked, but somewhat looked-down-upon by folks as though it’s food for kids.

It sounds weird, too — this dish, called “Flygande Jakob” or “Flying Jacob”, contains the unlikely ingredients of chicken, bananas, bacon and peanuts! While I rarely incorporate something like bananas in a savory dish, the combination of fruit with meat sounded like something that just might work — sort of like how pineapple compliments Canadian bacon on a Hawaiian pizza, or orange beef in Chinese restaurants is often fantastic.
